Our mission starts with our desire to honor God and protect the health of our communities and customers by walking gently. We do this by sourcing the freshest possible local ingredients. These ingredients must also meet certain standards of animal husbandry, grass-fed, and non-GMO. If we can’t, make it we support other local artisans that use the same standards.
We prepare healthy food by hand; especially crafted for each individual menu and style. We take into account dietary needs, preferences, and restrictions. We use traditional methods of soaking grains, bone broth, and most importantly low and slow. We are known for our BBQ and we take this time-honored tradition very seriously using only real wood, real ingredients, and a lot of time. Beyond BBQ we continue these beliefs into the traditional kitchen with the care and love you would find at Grandma’s house.
What We Do
We are a Farm to Table BBQ and catering company based out of our catering kitchen in the picturesque town of Honesdale, PA where we also offer our food through our cafe. We are also farmers operating a grass-based chicken farm on our family homestead in northern Wayne county where we raise and process much of the chickens and eggs we use with love. We offer specialized menus for all types of events from intimate in-home private catering and bartending to 200 people sit-down weddings, 500 person barbecues, fundraisers, and everything in between. Each event is carefully curated, sourced, and individually prepared to meet each customer's needs and desires and then served with the same love. Our roots are in BBQ, however, we offer traditional American cuisine, South American cuisine, Indian, and more. We also offer professional staffing, bar service, event venues, party rentals, and day of event planning services. No event is too small or large.
Catering Manager, Pit Master, Owner/Chef
Brandon was raised in Wayne County surrounded by farms, gardens, and delicious home-prepared meals. In his teenage years, he worked his way through the kitchen of renowned local Chef Cora Jones at the Lavilla Restaurant. In college he continued his love of food and food service at several well renowned farm to table establishments in upstate NY, learning the art of service, craft alcohol, and continuing to see great food made by hand. After college Brandon went on to run several other non-food businesses while growing his family and homestead which now consists of wife Sara, 6 children, and lots of chickens. After unsuccessfully trying his hand at different farm-to-table operations, Brandon decided to bring it all together with his love of great food, knowledge of traditional cooking, and support of local farms, to create Follow the Smoke, a catering and event company. With COVID leaving many brides without caterers and venues, Follow The Smoke has continued to expand our offerings to include all events of all sizes.
